1…Avocado corn pasta

INGREDIENTS

  • 400g dried bow-tie pasta
  • 2 cups sweetcorn kernels, cut from the cob, frozen or canned, drained
  • 2 tbsp basil pesto mixed with 2 tbsp olive oil and an optional pinch of chilli flakes
  • 4-5 tomatoes, cored and cut into wedges
  • 2 just-ripe avocados, cut into large chunks
  • Handful of basil leaves
  • 1/2 tsp salt and grinds of black pepper

METHOD

  • Step 1

    Boil pasta in plenty of salted water according to the manufacturer’s instructions. Drain and mix in corn and herb oil, toss to combine.

  • Step 2

    Gently mix through tomatoes, avocados, basil, salt and pepper. Transfer to a bowl and serve.

  • Step 3

    This can be made several hours before serving but don’t add avocados until the last minute to prevent browning.

INGREDIENTS

  • 1 cup (250ml) vegetable stock, chilled
  • 200ml natural yoghurt
  • 1 large avocado, halved, chopped
  • 1 cucumber, peeled, deseeded, 3cm piece reserved for garnish, the rest chopped
  • 4 spring onions, roughly chopped
  • 3 tablespoons roughly chopped coriander
  • 1 long green chilli
  • Juice of 1 lime
  • Tabasco sauce, to taste
  • Small bunch chives
  • 1 red chilli, thinly sliced
  • Avocado oil, to serve (optional)

Tortilla chips

  • 1/2 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 2 soft corn tortillas

METHOD

  • Step 1

    Preheat the oven to 200°C. Line a baking tray with baking paper. For the tortilla chips, combine the oil and paprika, then brush over both sides of the tortillas. Place on the tray and bake for 5 minutes or until golden and crisp. Season and set aside to cool, then break into chip-sized pieces.

  • Step 2

    To make the soup, whiz the stock, yoghurt, avocado, chopped cucumber, spring onion, coriander and green chilli in a blender until smooth. Add lime juice and Tabasco, then season and cover with plastic wrap. Place in the fridge to chill.

  • Step 3

    Finely chop the reserved cucumber. Once the soup is chilled, serve in small bowls topped with the tortilla chips, finely chopped cucumber, chives and sliced red chilli. Finish with a drizzle of avocado oil, if you like.

INGREDIENTS

  • 2 avocados, quartered,
  • 1/4 red onion, finely chopped
  • 2 large tomatoes, cut into 5mm pieces
  • Chopped fresh coriander, to serve
  • Flour tortillas, to serve

Dressing

  • 1 1/2 tablespoons fresh lime juice
  • 1 1/2 tablespoons extra virgin olive oil
  • 6-8 drops red Tabasco pepper sauce
  • Pinch of caster sugar

METHOD

  • Step 1

    To make the dressing, whisk the lime juice, oil, Tabasco sauce and sugar in a small bowl. Season with salt and pepper.

  • Step 2

    Divide avocado among serving plates. Combine the onion and tomato in a small bowl. Season with salt and pepper.

  • Step 3

    Spoon the tomato mixture over the avocado. Drizzle over the dressing. Sprinkle with coriander. Serve with flour tortillas.

INGREDIENT

  • 1 avocado, halved, stone removed, peeled
  • 2 tablespoons extra-light sour cream (Pauls brand)
  • 1 small red chilli, halved lengthways, deseeded
  • Pinch of salt
  • 1 x 420g can corn kernels, rinsed, drained
  • 2 eggs, lightly whisked
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons plain flour
  • 2 tablespoons vegetable oil

METHOD

  • Step 1

    Place the avocado, sour cream and chilli in the bowl of a food processor and process until smooth. Taste and season with salt.

  • Step 2

    Place the corn, egg, coriander and flour in a medium bowl and whisk until well combined. Heat the oil in a large non-stick frying pan over medium-high heat. Spoon 1 tablespoon of batter into the pan. Repeat to make 3 more fritters, spaced about 2cm apart, and cook for 2 minutes each side or until golden and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat with remaining batter to make 4 more fritters.

  • Step 3

    Serve fritters with avocado cream.

  • Juice of 1 lime
  • Juice of 1 lemon
  • 4 vine-ripened tomatoes, peeled, seeds removed, chopped

  • 1 green chilli, seeds removed, finely chopped
  • 1 garlic clove, crushed

METHOD

  • Step 1

    Place all ingredients in a food processor and pulse to just combine ? don’t over-process as you want the guacamole to be quite chunky.

  • 1/3 cup olive oil,
  • 2 tablespoons fresh lime juice,
  • 1/2 teaspoon finely grated lime rind
  • 1 garlic clove, crushed
  • 1 small red chilli, deseeded, finely chopped
  • 1/2 teaspoon caster sugar
  • 300g button mushrooms, quartered
  • 200g sundried tomatoes
  • 1/2 red onion, sliced
  • 1 avocado, peeled, chopped
  • 80g baby rocket.

METHOD

  • Step 1

    Whisk 1/3 cup olive oil, 2 tablespoons fresh lime juice, 1/2 teaspoon finely grated lime rind, 1 garlic clove, crushed, 1 small red chilli, de-seeded, finely chopped, 1/2 teaspoon caster sugar. Season.

  • Step 2

    Place 300g button mushrooms, quartered, in a large bowl. Add the dressing and toss until well coated. Cover and place in fridge 1-2 hours to marinate.

  • Step 3

    Add 200g sun dried tomatoes, 1/2 red onion, sliced, 1 avocado, peeled, chopped, and 80g baby rocket. Toss to combine just before serving.

INGREDIENTS

  • Flesh of 4 avocados
  • Juice of 2 limes
  • 200g caster sugar
  • 300ml thickened cream
  • 1 teaspoon vanilla extract

METHOD

  • Step 1

    Whiz avocado and lime juice in a food processor until a smooth puree.

  • Step 2

    Beat the sugar and cream with electric beaters to combine. Add avocado and vanilla, then whisk until well combined.

  • Step 3

    Churn mixture in an ice cream machine according to manufacturer’s instructions. (Alternatively, pour into a shallow container and freeze for 2 hours or until frozen at edges. Remove and beat with electric beaters. Return to container and refreeze. Repeat 2 or 3 times). Transfer to a container and freeze for 4 hours or until firm.

INGREDIENTS

  • 1 tablespoon olive oil
  • 30g unsalted butter
  • 2 large leeks (white part only), finely sliced
  • 1 teaspoon mild curry powder
  • 2 large potatoes (about 450g), chopped
  • 1L (4 cups) good-quality chicken stock
  • 300ml thin cream
  • 1 small (about 100g) cooked chicken breast, shredded
  • 1/2 cup cooked SunRice White Long Grain Rice
  • 1 avocado, flesh diced

METHOD

  • Step 1

    Heat the oil and butter in a large saucepan over low heat, add the sliced leek and cook, stirring occasionally, for about 10 minutes or until softened. Add the curry powder and stir for a few seconds, then add the potatoes and stock. Increase heat to medium, bring to the boil, then simmer for 10 minutes or until potatoes are cooked.

  • Step 2

    Allow to cool slightly, then blend in batches until smooth. Return to the pan, add the cream and season with salt and pepper. Add the chicken and rice, and reheat gently (do not allow to boil). Serve in mugs or bowls and top with avocado.

INGREDIENTS

  • 1 x 60cm baguette
  • 250g light cream cheese, softened
  • 1 small avocado, halved, stone removed
  • 2 tablespoons lemon juice
  • 2 tablespoons finely chopped chives
  • 120g mesclun salad greens
  • 1 cup (140g) semi-dried tomatoes
  • 2 x 175g packs Primo Beechwood Short Cut Rindless Bacon

METHOD

  • Step 1

    Cut baguette into 4 pieces. Halve each piece lengthways.

  • Step 2

    Place cream cheese in a bowl. Beat until smooth. Mash avocado with a fork until smooth. Add to cream cheese with lemon juice. Add chives. Stir well. Season with salt and pepper. Spread avocado mixture on base and top of each baguette piece.

  • Step 3

    Place salad greens on base of baguettes. Top with semi-dried tomatoes.

  • Step 4

    Heat a non-stick frying pan over medium-high heat. Add half the bacon. Cook for 2 minutes each side. Transfer to a plate lined with paper towel. Repeat with remaining bacon. Top bases with bacon and baguette tops. Serve.

INGREDIENTS

  • 2 woodfired pizza bases
  • 2 garlic cloves, crushed
  • 1/3 cup (80ml) olive oil
  • 250g ricotta, drained
  • 1 large avocado
  • Juice of 1 lemon
  • 200g semi-dried tomatoes
  • 2 tbs oregano leaves
  • 1/3 cup (90g) good-quality basil pesto

METHOD

  • Step 1

    Preheat the oven to 250°C. Place 2 trays in the oven to heat. Place each pizza base on a sheet of baking paper.

  • Step 2

    Combine the garlic and oil, then brush over the pizza bases. Divide ricotta between pizza bases and season. Using the baking paper, transfer the bases onto the hot oven trays, then bake for

    10 minutes or until bases are crisp. Meanwhile, cut avocado into small cubes and toss in lemon juice. Remove pizza bases from oven and scatter with avocado, semi-dried tomatoes and oregano. Dot over pesto and serve

INGREDIENTS

  • 8 small rice-paper wrappers
  • 1/2 cup shredded iceberg lettuce
  • 3/4 cup (50g) beansprouts, trimmed
  • 1 small carrot, peeled, grated
  • 1 medium Lebanese cucumber, peeled, cut into ribbons (see note)
  • 1 medium avocado, peeled, cut into strips
  • Sweet chilli sauce, to serve

METHOD

  • Step 1

    Pour warm water into a heatproof bowl until half full. Dip 1 rice paper wrapper in water. Place on a flat surface. Stand for 20 to 30 seconds or until soft enough to roll without splitting.

  • Step 2

    Place one-eighth of lettuce along 1 edge of 1 wrapper. Top with one-eighth each of beansprouts, carrot, cucumber and avocado. Fold in ends. Roll up firmly to enclose filling. Cover with a damp tea towel to prevent roll drying out. Repeat with remaining wrappers, lettuce, beansprouts, carrot, cucumber and avocado. Serve with sweet chilli sauce.

INGREDIENTS

  • 8 good-quality pork & herb chipolata sausages, casings removed
  • 6 flat pancetta slices (see note)
  • 100ml extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 3 cups watercress, sprigs picked
  • 2 avocados, chopped
  • 120g fresh redcurrants, stems removed (see note)

METHOD

  • Step 1

    Roll the sausage meat into walnut-sized balls, then place in the refrigerator for 30 minutes to firm up.

  • Step 2

    Meanwhile, preheat the oven to 180°C. Line a baking tray with baking paper.

  • Step 3

    Place pancetta on the tray and bake for 8-10 minutes until crisp. Cool slightly on paper towel, then break into pieces.

  • Step 4

    Heat 1 tablespoon oil in a frypan over medium heat and cook the meatballs, turning, for 5-6 minutes until golden and cooked through. Set aside and keep warm.

  • Step 5

    Whisk Dijon mustard, vinegar and remaining 1/3 cup (80ml) oil in a bowl and season. Add watercress, avocado and pancetta, and toss gently to combine.

  • Step 6

    To serve, arrange salad on a platter and scatter with meatballs and redcurrants just before serving.

  • 2 large avocados
  • 1/4 cup cocoa powder
  • 2 teaspoons vanilla extract
  • 3 tablespoons maple syrup
  • 1/3 cup coconut cream
  • 150 g dark chocolate (70%), melted
  • Extra grated dark chocolate, to serve

METHOD

  • Step 1

    Cut the avocados in half and remove the stone. Scoop the flesh into the large bowl of a food processor. Add the cocoa powder, vanilla, maple syrup and coconut cream. Process for 10 seconds. Scrape down the sides and process a further 10 seconds.

  • Step 2

    Add the cooled, melted chocolate. Process for 10-15 seconds or until creamy and smooth. Spoon into serving glasses or dishes. Serve with fresh fruit.

INGREDIENTS

  • 2 (340g) chicken breast fillets, halved lengthways
  • 1/2 cup plain flour
  • 2 tablespoons milk
  • 2 eggs
  • 1 1/2 cups dried breadcrumbs
  • Olive oil cooking spray
  • 1/2 cup tomato pasta sauce
  • 1 medium avocado, sliced
  • 1/2 cup grated reduced-fat mozzarella cheese
  • Salad leaves, to serve

METHOD

  • Step 1

    Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.

  • Step 2

    Place chicken between 2 sheets plastic wrap. Using a rolling pin, pound until 5mm thick. Place flour on a plate. Lightly whisk milk and eggs together in a shallow bowl. Place breadcrumbs on a plate.

  • Step 3

    Coat 1 piece chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs, pressing on to secure. Place on prepared tray. Repeat with remaining chicken, flour, egg mixture and breadcrumbs. Spray chicken with oil. Bake for 5 minutes. Remove from oven. Top each with 1 heaped tablespoon pasta sauce. Arrange avocado over sauce. Sprinkle with cheese. Return to oven. Bake for 5 to 7 minutes or until golden and chicken is cooked through. Serve with salad.

INGREDIENTS

  • 1 tablespoon extra virgin olive oil
  • 2 x 400g cans chickpeas, drained, rinsed
  • 2 medium avocados, chopped
  • 2 tablespoons tahini
  • 1/2 cup lemon juice
  • 2 garlic cloves, crushed
  • Pinch of smoked paprika
  • Lebanese bread, to serve

METHOD

  • Step 1

    Heat oil in a small frying pan over medium-high heat. Add 1/4 cup chickpeas. Cook, stirring occasionally, for 3 to 4 minutes or until just golden. Remove from heat. Set aside to cool.

  • Step 2

    Using a food processor, process remaining chickpeas with avocado, tahini, lemon juice and garlic until smooth and combined. Season with salt and pepper.

  • Step 3

    Spoon the hummus into a serving bowl. Top with chickpeas and any oil in pan. Sprinkle with paprika. Serve with Lebanese bread.
